Microsoft Workplace Point Of Sale: Is it illegal to make more than a single? Not for sale, just so I can have a backup in situation windows vista goes all crazy and i dunno, “restores to a secure point” all my files away.

Depends where you live.
In Canada, you are legally allowed to make Back up’s of digital media for your own use.
I guess it is also legal in the states.
Distribution is what is the illegal part of copyright.

Yeah you can burn the ISO file into as many disks as you want. If you want to keep the disks with you then its not illegal. Though, in some countries it is. You can use any burning software such as nero or any other of your choice to make the disks. You can download the free version of nero from http://www.nero.com/eng/downloads-nero9-free.php.
